
INGREDIENTS:
1 cup rice flour, coarsely ground
¼ cup sour curd
1 tsp green chilli- ginger paste
¼ tsp cumin seed powder
1 tbsp gunpowder chutney
Salt to taste
2-3 tbsp oil
Some banana leaves.
METHOD:
1. Mix all the ingredients, except the gunpowder chutney to make a thick batter. Allow the batter to ferment for 3-4 hours. Add a little water if required.
2. Then add the gunpowder chutney and mix well.
3. Place on greased banana leaf over a heated tava and spread 2 tbsp of the batter over it.
4. Cover with another greased banana leaf and cook on both the sides till the banana leaves turn slightly brown and peel off easily.
5. Repeat with the remaining batter to make more paankins.
6. Serve hot with green chutney.
